New Month, Fresh Flavors—Let’s Toast to International Women’s Day!

March isn’t just about longer days and seasonal citrus—it also brings International Women’s Day on March 8th. And here in Italy, it’s all about the mimosa flower. The bright yellow blossoms are everywhere, symbolizing strength, resilience, and friendship. Plus, they’ve inspired the classic mimosa cocktail—I mean, who can go wrong with a flute of freshly squeezed orange juice topped up with a bubbly prosecco or champagne. Since oranges are in season right now, it’s the perfect excuse to make one!


I’ve got a recipe for you today that brings the flavors of a mimosa into a light, citrusy dessert—perfect for celebrating the women in your life (or even more importantly – treating yourself!).


🥂 Mimosa-Infused Orange Cake


Serves 8

Ingredients

  • 200g flour
  • 150g sugar
  • 3 eggs
  • 1 tsp baking powder
  • 100ml fresh orange juice (blood orange works too!)
  • 50ml sparkling wine (Prosecco or Champagne)
  • Zest of 1 orange
  • 100ml olive oil
  • A pinch of salt

For the Glaze

  • 100g icing sugar
  • 2 tbsp orange juice
  • 1 tbsp sparkling wine

Method

  1. Preheat your oven to 180°C (350°F). Grease and line a 20” cake tin.
  2. In a bowl, whisk together the eggs and sugar until light and fluffy. Slowly add the olive oil, then mix in the orange juice, sparkling wine, and orange zest.
  3. In another bowl, combine the flour, baking powder, and salt. Gradually fold this into the wet ingredients until just combined.
  4. Pour the batter into the cake tin and bake for 30-35 minutes or until a toothpick comes out clean. Let the cake cool before glazing.
  5. For the glaze, whisk together the icing sugar, orange juice, and sparkling wine. Drizzle over the cooled cake and let it set.

This cake is soft, citrusy, and has just a hint of fizz—like a mimosa in cake form! Serve it with a glass of the classic cocktail for the ultimate brunch pairing with the girls!
